熟成うなぎ井筒屋さんは、古民家を改築した佇まいで、店内も落ち着いた雰囲気が漂っています。料理は「熟成のうなぎ」を提供しており、伝統的な鰻の調理工程に熟成という要素を加えることで、深いコクのある旨味を引き出しています。職人の手で丁寧に洗浄された鰻は、低温でじっくりと熟成させることで、活鰻独特の匂いがなくなり、イノシン酸やアミノ酸類といった旨味成分が増えます。皮はパリッと香ばしく、身はしっとりとした熟成のうなぎです。
このお店では、以前はう会席をいただきましたが、今回は「熟成竹めし二のう」と「熟成重箱」を選びました。「熟成竹めし二のう」は、熟成のうなぎが自家製の竹の器に盛られて提供されます。定番の「蒲焼き」とねぎを合わせた「白焼き」の二つの味を楽しむことができます。香の物と吸い物の小鉢も付いています。
もう一つの選択肢である「熟成重箱」は、自家製のタレに三度漬けて焼き上げられる定番のうな重です。熟成のうなぎは切って提供されます。このセットにも香の物と吸い物が付いておりです。
どちらの料理も香ばしく、食感も良く、非常に美味しくいただくことができました。熟成うなぎ井筒屋さんは、熟練の技術と伝統を融合させた料理で、鰻の美味しさを最大限に引き出しています。
