名古屋の四間道に今夏オープンした和食屋さん。
京都の料理屋さんで修行された大将のお店です。
ランチも営業されてますが夜行ってきました。(^o^)
名古屋駅からiPadの地図を頼りながらお店まで歩きます。
この辺りは昔ながらの町屋風情で京都みたい。
真っ暗な路地裏にお店があります。建物の中には何軒か飲食店が入ってます。
てんぷら、フレンチ、イタリアンなど。
少し遅れてお店に着くと満席でした。常連さんっぽい方もいて既に人気があるみたい。
店内はカウンター席とテーブル席が一つ。
BGMはありません。
お料理は5000円のコースです。他に7000円、10000円。
内容として、一汁五菜。先付、お椀、造り、焼八寸、お凌ぎ、炊合せ、食事、水物。
とゆう流れ。
先付は柚子を割山椒に見立てたものに鱈の白子と焼舞茸、ポン酢のジュレ。
お椀は牡蠣しんじょに九条ネギ。お出汁が京都の料理屋さんの味そのもの。
お造りはフグの焼き霜造りと鰤、マグロ。あしらいの柚子塩が印象に残りました。
焼八寸は朱塗りの八寸盆に盛り込まれてます。鰆のウニ焼やゴマ豆腐、サーモンの絹田巻きなと。どれも一歩引いた味付けで、すーっと口の中に入っていきます。
凌ぎは蕎麦寿司。芯にに海老とキュウリ、シャリ代わりに蕎麦。
炊合せは甘鯛の蕪蒸し。蓋を開けると甘鯛と蕪のいい香り。とても優しい味の銀餡。体が温まります。
食事はたきたての土鍋ご飯。炊き上がってからカニ身を混ぜて出来上がり。
粒が立ってる美味しいご飯。何枚でも食べられそう。これに生湯葉が入った赤だし。
そして香の物が絶品なんです!ちりめん山椒が本当美味しい。
同行者さんが京都の岩さきの物とよく似てると言ってました。(^^)
水物はカットフルーツとミカンのゼリー。
大将と色々お話させてもらいました。実家は天白区で京都には12年ほどいらしたそう。
とても気さくな方で好感が持てますね(^^;;
応援したくなる店がまた一つ増えてしまいました。
