京星さんへは知人に3ヶ月以上も前からお願いし連れていただきました。なかなか入れないお店みたいで、私の人生の中でこうした素敵なお店にお目にかかれるのは何度あるのかと考えてしまいます。それはもう奇跡のような出会いでした。ここは語れることが多すぎて困ってしまいます。
まず基本情報ですが、1947年創業、老舗中の老舗。2010年から長期間にわたりミシュラン1つ星を獲得し続けています。現在は三代目の榊原俊徳氏が先代が築いた技と流れを守り続け、腕をふるっています。
並ぶのは作品のような天ぷらたち。見た目はシンプルながら美しく、ひとつひとつが生きているような、動きのある仕上がり、まさに芸術を感じます。
天ぷらは卵を使わない衣で仕上げられています。そのため重たさや余計な香りは一切なく、きわめて軽い食感と素材本来の風味を活かした天ぷらに。衣ひとつにさえ世界の広さを感じさせられます。
京星さんの味を知ってしまっては、もう他所でいただく油の香りがする天ぷらなんてまず論外。素材が生きていないただ天ぷらでしかない天ぷらももう食べられませんね。
もうひとつ技の核心にあるのが、独自配合の塩。粉雪のようにさらさらな自家製塩です。複数種類の塩を組み合わせていて、特別な方法で乾燥・ふるいにかけているとのこと。塩自体が軽やかなので、油っこさとは無縁。食材の甘みや香りをすっと引き立てる役目があります。粗さの残る塩だと舌に尖りがちですが、この塩は丸みがあって優しい。例えるなら「調味料」ではなく「料理の一部」と表すのが正しいでしょう。
あとは徹底された食材選び。店主自ら中央市場・錦市場・大原朝市などへ出向き、「天ぷらにしておいしい」旬の素材を自ら見極められています。これが京星さんでしかいただけない、唯一無二の品々が生まれる所以です。
匠の腕に、舌も心もうっとり。天ぷらって普通は「揚げて完成した料理」なのに、京星さんの一品はまるで揚げたことで命が目を覚ましたように生き生きしているんです。食べてからが本領発揮。これが食材の心音を聴いて命を吹き込む者の天ぷら。
素材選びから調理、提供までこだわってもなお絶品の領域に足を踏み入れられない者、世界を知らずに料理人生命を終える者、客としては、巡り合わせがない者がいます。
しかし、何かのきっかけで、全ての点が繋がって生み出された奇跡を、京星さんの天ぷらを通して味わえたならこの上ない幸せ者なのではないでしょうか。訪れた誰もがお金に換えられない・代替の効かない価値のある体験になることと思います。『一生忘れない天ぷら』でした。
