当店常連のEricさんからお誘いを受けて、丁度東京へ1泊2日で出張の夜の仕事終わりにはせ参じました。 他にもうお一人初めてお会いするレビュアーを交えて3名で、Ericさんのホームポジションのカウンター席に座らせてもらいました。
お店はカウンターのみのこぢんまりとして、でもピリッとした空気と清潔感が溢れるとても心地良い雰囲気です。 大将もはにかんだ笑顔が素敵な木訥な雰囲気のお方。
今回の注文はEricさんにほぼお任せで、軽く炙った鶏肉にわさびをのせたさびやきに始まり、かしわ、砂肝、血肝、まるはつ、合鴨、手羽先、つくね、などを頂き、最後に僕の好みでぼんぼちを追加しました。
目の前の焼き場で焼かれるのをじっと見ていましたが、常に大将が団扇で炭に空気を送り強火のそれもかなり、炭と焼鳥の間隔が狭くて言うなれば「強火の近火」で調理されているのにちょっとビックリ。 伺ってみると、遠火だと炭の臭いが焼き鳥に移るのでそれを嫌ってこのスタイルで調理しているとの事です。
拘りの焼き加減で焼かれた焼鳥はどれも絶品! 特に中がレア状態のさびやきや、メニューに加えた当初、火加減に腐心されたというまるはつ(丸ごとの心臓)、つくねの印象が強いです。 どの串もうま味がお肉からあふれ出す美味さで、使っている塩にも秘密がありそうです。
お値段もお通しの漬物、箸休めの大根おろし、最後のあっさりでもコクのある鶏スープや、ビールを2本、ミカン酒を2杯で3人で1万5千円と耳を疑うお値打ちさ! (これとは別にEricさんがキープしている美味い焼酎はEricさんの別勘定でご馳走になりました。)
大変良いお店で、名古屋から上京した際には是非また訪問したいと思います。 Ericさん、改めて有り難うございました。
