ご主人の山根さんとは20年来のお付き合いという山根さんの主治医であるK先生との会食。
もう、あうんの呼吸で料理が出てくる。
そして出てくるたびにK先生のコメントがあり、食事の質をよりあげる。
最初の胡麻豆腐。豆腐自身も美味しいが、特筆はそのつけるたれ。醤油がベースだが、昆布出汁が素晴らしい!
造りは鯛、かれい、タコ、赤貝、きずし、中トロ。
すべて素材自身が素晴らしいが、つけるポン酢や塩が恐ろしく旨い。
K先生やご主人のお話では、塩に煎った米を混ぜるのだそうである。だからおかきの香りがします。
そして、ポン酢も昆布出汁が今までいただいたポン酢とは異なる世界を作り上げています。
赤貝もおそろしく大きい。
K先生から中トロは出されてもすぐに食べてはいけないと注意を受ける。
しばらく待った方が、脂がしみ出てきてより美味しくなるのだと。
ちょっとしたことですが、確かに違います。
茶碗蒸し、まぐろのほほ肉、土瓶蒸し、カニ。
すべて言うことありません。
K先生の大好きな”ばくらい”。
ほやとこのわたの塩辛を混ぜたものだそうです。
この日のお酒である、”浦霞 禅”に合います、合います。
にぎりは、いか、こはだ、漬け、中トロ、海老、穴子。
巻きはウニ、高菜、ごぼう。
一つ一つ寿司飯の込め方が違っています。すごいテクニックです。
単なる味噌汁と言えば、怒られそうな味噌汁。
合わせ味噌だそうだが、入れる直前に合わせるとのこと。
素晴らしい。
最後はカステラのような玉子焼き。
すべてに文句も注文もまったくありません。
お客さんの層も全然違います。
