十万石の城下町・千葉県大多喜町にある「自然栽培、天然菌でつくられた発酵調味料を取り入れ、心も体も喜ぶ料理」をだしてくれるという和食のお店。「大多喜お城まつり」開催中の日曜日に念願かなって訪問できました。
12時少し前に到着するとお店の外には入店を待つ人が!前日に予約をしておいて大正解でした。店内はU字型のカウンター10席のみ。一番奥に「ぷんち様 ご予約ありがとうございました」と手書きのカードが置かれた席が用意されています。こういうちょっとした心遣いってうれしいですよね~
今月の御膳は「さつま清まし汁」で、お値段は一の膳・本膳2,100円、本膳1,700円、一汁一菜1,200円。一の膳・本膳を注文し、自然醗酵ビール(世嬉の一酒造 天然干し柿酵母)800円と天然麹菌玄米甘酒葛もち 500円もつけちゃいました。
ビールグラスを冷やす時も1つずつラップで口をふさぐ細やかさ!有機麦芽・有機ホップ使用の天然醗酵ビールはフルーティでうまいな~。
最初は一の膳です。
・無花果の甘酒みそ田楽風
・季節野菜のすだち醤油
卵・乳製品・上白糖・動物性食品は使わない究極の野菜料理。電子レンジ、アルミ、テフロン樹脂加工の調理器具も使用せず、素材の持ち味を活かすように、とても丁寧に手をかけて作られています。どちらもじんわりとうまいな~。
続いて本膳。
・ひじきと茗荷の酢のもの
ひじきと茗荷を組み合わせるってすごい!こんなにもあうものなんですね~
・炊き合わせ鉢(ぜんまい・高野豆腐・椎茸の田舎煮、棚原さんのパプリカうま煮、苦瓜の胡麻煮、蓮根山椒煮)
苦瓜の胡麻煮が秀逸!もっと食べたい!!
・焼き物(季節の野菜 みそだれ)
大きく切った牛蒡の歯応えがとてもいいです。
・土鍋炊き自然栽培玄米ご飯
「自然栽培」とは肥料も農薬も使わずに育てたものだそうです。噛めば噛むほどうまいな~。そしてこのおこげがたまりません!
・さつま清まし汁
鰹節や煮干しも使わず、昆布と干し椎茸でとったお出汁が美味しい♪具だくさんで繊維質もたっぷりいただけますね。さつま芋の甘さにもびっくりです。
・香の物
もちろん手抜きはありません。
最後に甘味。本日の甘味からこちらを選びました。
・天然麹菌玄米甘酒葛もち 500円
ふるふるとやわらかな葛もちです。やさしい気持ちになれますね~
まさに「心も体も喜ぶ料理」でした!
奥様の接客も気持ちよく、食後にこんな幸せな気持ちになれるお店はなかなかないですね。佐倉から70kmはちょっと遠いですが、ぜひまた訪問したいです。ごちそうさまでした。
