土曜19時半すぎ、ふたりで利用。1時間半ほど滞在。客入りは9割。
クリスマスもどこ吹く風、テーブルも座敷も満席で、カウンターになんとか座ることができた。
●蟹のふわふわ蒸し(800円)
行ったら必ず頼むこの料理。
今日のはとくにふわふわで、蟹の風味が豊かだった。
●本日の玉子焼き・牡蠣と三つ葉(400円)
カウンターの上に大皿で置かれており、ついつい注文。
牡蠣が入っているのは珍しいですね。
どっしりとした密度があり、甘さもたっぷり。
●いかゴロ西京漬け(400円)
やさしい味噌の風味が、濃度たっぷりの肝の旨味を包み込む。
●明太子の粕漬け(500円)
酒が進む一品。
酒粕の風味がしっかりと明太子に移っている。
ブロックに切られた胡瓜は色味もよく、食感にもアクセントを加える。
●白子の塩焼き(850円)
ねっとりとした白子が、うっすらと焼かれています。
菜の花を添えているのも珍しい。
●あんこう煮(肝入り)(950円)
小鍋で供されました。
肝のおいしさもさることながら、実と皮のぷりぷり感がたまらない。
●かんぴょう巻(300円)、納豆巻(300円)
締めとしてお願いした。
量もしっかりとしており、コストパフォーマンスはすばらしい。

日曜17時半すぎ、ふたりで利用。1時間15分ほど滞在。客入りは6割。
いつもは大人数のためコースで利用することが多かったが、この日は友人とお邪魔し、単品でお願いした。
●生牡蠣・3個(750円)
ふたりのため2個でお願いできるか訊いたところ、快く対応していただけた。
品種や産地は聞かなかったが鮮度はよく、ミネラルたっぷりの牡蠣だった。
●牡蠣と豆腐の白味噌煮(850円)
牡蠣の風味が白味噌に溶け合って広がる。
素揚げした舞茸の香ばしさは、いいアクセントに。
●鱈の白子の天ぷら(900円)
椎茸やしし唐辛子も入ってます。
油切れはよく、白子のとろけるような食感も美味。
●地鶏ささみの明太子和え(600円)
新鮮な笹身に辛めの明太子がほどよく和えられている。
日本酒もいいが、焼酎、ビール、なんでも合いそうだ。
●本日の玉子焼き・鶏しめじ(400円)
密度の濃い、どっしりとした玉子焼きには鶏やしめじのほかに銀杏が入っている。
やや甘めで、デザートとしてもいいかもしれない。
●蟹のふわふわ蒸し(800円)
この店のスペシャリテとでもいうべき一品で、注文が入ってから卵白を手動で泡立て、ふわふわに蒸します。
蟹の風味がたっぷりで、癖になる。

いつもおいしいものばかりですが、特によかったのは「秋刀魚のわた漬けとウニ」。
わたのほろ苦さとウニの組み合わせが絶妙でした。
松茸の天ぷらも今年口にしたのは初。
もう秋がそこまできてるんですね。

この日はオープン10周年イベントということで、店主のお兄さん(芝で『蕎麦 案山子』を経営)も見られ、料理6品、鮨、蕎麦、飲み放題という内容で3,000円でした。

どれも丁寧に作られており、品があります。
白和えは苺があしらわれていて爽やか。
鶏のから揚げは油っぽさがまるでなく、ほどよくジューシー。
牛筋と筍の煮物には春を感じた。
鯛と山芋のふわふわ蒸しは、この店名物の「蟹のふわふわ蒸し」に通じるものがあります。
江戸前鮨には煮切り醤油がぬられており、完成度が高い。

料理のメニューは毎日手書きしているようで、魚介を使ったものが多いですね。
酒のメニューを見ると、つい笑みがこぼれるラインナップ。

国権(760円)をお願いすると、お通しとしてつぶ貝が出てきた。嬉しいですね。
先に別の店で食べてきたため、いただいた料理は酒盗(400円)と蟹のふわふわ蒸し(800円)の2品。
酒盗にはクリームチーズが和えられています。
ほかの店でもときどき見かけますね。酒に合います。
蟹のふわふわ蒸しは本当にふわふわで、驚くというよりもよろめいた。
すごいな、これ。
訊くと店主は京都の和食店で長く修行されたそうで、そのときに考案し、自分の店を持ったら出そうと考えていたとか。
お店の定番メニューだそうです。
ほかの料理も気になりましたが、なにはともあれこの蟹のふわふわ蒸し。
これを食べるためだけに、誰かを連れて行く価値があると思っちゃいました。
