【2015.05.17】再訪
最近は22時以降のアラカルトの時間帯ばかりに行っていましたが、ひさびさにコース(8,800円)を。
17時に予約し、店をあとにしたのは23時。
すべての料理が出終わるのに6時間かかり、十分過ぎる内容。
すごい鮨屋さんです。月イチで通いたい。

鶴齢(青木酒造/新潟県南魚沼市)からの帰りに急に鮨が食べたくなり、お邪魔する。
奇縁ですね。鶴齢の本醸造があったので、お燗をつけてもらう。
あとは、「おいしいところを8貫くらい握って」というお任せ。

【2015.03.16】再訪
最近はメディア等の露出がすごい、『鮨 心白』さん。
雑誌などでもよく見かけるようにもなり、貸切営業も多くなってきたという。
この日も貸切だったが、駄目元で22時ごろに電話をしてみたところ、お客様がちょうど帰られたというのでお邪魔することに。
こんなタイミングはなかなかない。
店主と一対一で鮨を堪能できる贅沢。
はじめに、小鉢(うるいと筍と煮蛤の柚子味噌和え)をいただき、あとは握りを9貫。

握りのあいだに、卵黄の醤油麹漬けをいただいた。酒が進んですすんでしょうがない。
最近、酒専用の冷蔵庫(70本収納可能)を一機入れたそうで、既存の40本を足すと110本ほどのラインナップになったそうです。
8席のお店なのに、清酒は110本。
雑誌では「熟成鮨」として書かれていることが多いが、『鮨 心白』さんの魅力のひとつは、鮨の前に出されるまっとうな日本料理であり、また清酒でもある。
こんな鮨屋、なかなかない。

今年初めての鮨は、広尾『鮨 心白』さんに決めていた。
この日は22時すぎの遅い時間にお邪魔したため、コースではなく単品でいただく。

はじめにつまみをいただいたのち、「おいしいところをちょうだい」と握りをお任せで5貫。
食べ始めたら止まらず、さらに3貫追加した。
熟成の絶妙な加減に、うなる。
特にすごかったのは、福井の鰤(10kg)。
2,000匹上がるなかで、わざわざ活け締め放血神経抜きするのはないという、『鮨 心白』さんだけにやったレアな鰤。
〆の牡蠣軍艦は、牡蠣も海苔も酢飯も宮城・東松島産。
相性の良さは言うまでもなかった。
【2014.12.15】
『鮨 心白(しんぱく)』
2014年12月15日(月)、広尾・恵比寿・白金のちょうど真ん中に、心躍る店ができた。
店主の石田大樹氏は、日本料理『青山 えさき』を振り出しに、鮨『銀座 くろ寿』、日本料理『恵比寿 幸せ三昧』にて修行。
日本酒専門『中目黒 酒人あぎ』では料理長を務める。
江戸前の鮨だけではなく日本料理全般に精通しており、河豚やすっぽん、鰻、鱧、鮟鱇などひと通りこなす。
また、清酒への造詣も深く、出身の愛媛の銘酒「賀儀屋・御代栄(成龍酒造)」を中心に、「三芳菊(三芳菊酒造/徳島)」、「風の森(油長酒造/奈良)」、「十旭日(旭日酒造/島根)」などを揃え、ワインや焼酎は一切置かないというこだわりよう。
ビールは4大メーカーは取り扱わず、埼玉・小川町の「麦雑穀工房」や、埼玉・川越の「COEDO」といったクラフトビールを置く。
もちろんそういったこだわりは食材にも見られ、全国各地の漁港や、漁師さん、農家さんのもとへ直接足を運び、直送してもらっているという。
米は宮城・東松島で「かぐや姫」を育てる木村正明さん。
海苔は、皇室御献上の海苔を決める「奉納乾海苔品評会」で、若干28歳にして最年少で優勝を果たした、宮城・東松島の相澤太さん。同じく宮城・東松島の津田大さん。
山葵は長野・安曇野の「わさびや 游」さんなど、聞いているだけで楽しい気分にさせられた。
生産者さんとの繋がりを大切にしている姿勢に、非常に好感が持てた。

オープン初日だからでしょうか。とても8,800円とは思えない内容。
握りは、酢飯には赤酢と塩のみを使用し、鮨種には煮切り醤油や煮詰めを塗るという、昔ながらの江戸前鮨。
特徴的だったのは、どの魚介も熟成をかけ、もっとも旨味が載ったタイミングで出しているという点。
熟成のできる特殊な冷蔵庫を使っているそうで、凡庸な言い方だが、なにを食べてもうまかった。よろめいた。
基本はコースのみだが、22時以降は単品での注文も可能だそうで、極端な話、「ちょっと小腹が空いたので巻き物をちょうだい」といった使い方でも全然構わないとのこと。
また、閉店時間を決めておらず、最終入店の23時までに入れば、あとは「満足されるまで」とのこと。
使い勝手もよさそうだ。
なお、清酒党ならぴんとくるであろう、店名にもなっている「心白」。
清酒を造る際、お米(酒造好適米・酒米)を削った中心分を「心白」と呼ぶ。
「一麹、二もと、三造り」という言葉があるように、酒造りでもっとも重要な部分は麹造りだと聞く。
デンプンが少なく柔らかい「心白」には、麹菌の菌糸が破精(はぜ)込みやすく、強い酵素力を持った麹ができ、酒母や醪での糖化もよくなる。
心を白く、まっすぐに握る店主を「心白」とするならば、その店主が信頼を寄せる漁師さんや農家さん、蔵元さん、職人さん、作家さんなどの想いは「麹菌」。
その想いがまっすぐに届いた完成形が、『鮨 心白』。
いい店が、またひとつ増えた。
すぐに有名店になるのだろうなと、そんな予感がしてならない。
