紫檀@札幌 とある週末の北海道への蕎麦旅の際に、前々からぜひお邪魔させていただきたいと思っていた紫檀さんにふらっとお邪魔させていただく。まずはビールで喉を潤しつつ、山わさびがたっぷりとかかった新感覚の板わさから始め、ぷっりぷりで濃厚な根室の真たちポン酢、鮮度がとってもいいのが見た目からだけでもとてもわかる、余市の活きタコ刺しに根室のホタテ刺しなどなど、北海道ならではの蕎麦前の時間を日本酒の杯もぐいぐいと進めながら愉しませていただく。ほど酔い頃合いで、鴨汁せいろを手繰り〆る。店主さんとも初めましてでしたが、色々とお話もさせていただき、ゆったりとした本当に酔い蕎麦屋酒の時間に、本日もお昼間より大変に上機嫌。 At the weekend soba journey through Hokkaido, I had the pleasure of visiting @shitan_soba.sapporo_2 , Sapporo, a spot I had longed to experience. Starting with a refreshing beer, we indulged in innovative dishes like Itawasa （Japanese fish cake）mountained with Yama-wasabi, succulent Nemuro Soft Roe （Shirako） with ponzu, and eshest Hokkaido scallop sashimi. With each bite, the essence of Hokkaido's culinary treasures unfolded before us. As we sipped sake, our conversation with the owner blossomed, adding to the relaxed ambiance of the moment. Finally, we concluded our meal with a comforting duck broth soba.
