風も和んだ頃、ふと盛岡への用事ついでに相方様へと御連絡、仲間内での決起集会にハラリと誘われて【ブルリス】で久々のメンバーと顔を合わせました。
ドリンクは私はノンアルですが、皆様は最初の乾杯はスパークリングワインから、お料理に合わせてお任せでマリアージュを所望。
▪️ラタトゥイユのカプチーノは八幡平市マッシュルームを忍ばせた温かいスープ仕立てに。
▪️二戸ホワイトアスパラ、八幡平市グリーンアスパラを3種のお肉と合わせて盛った前菜は、初夏のアスパラの息吹とプロシュートや黒毛和牛のリエット共に野趣溢れる前菜に。
▪️サーモンスフレと帆立貝を軽い白ワインソースで岩手の磯の香りを彷彿とさせる軽やかさに。
▪️春キャベツのポタージュは春キャベツの風味と歯触りが心地良く。
▪️真鯛ピューレヴェールは、皮目をこんがりと焼き上げては、濃厚に凝縮された海老ビスクスープと後追いマリアージュなるアメージング世界へ誘われ。
▪️愛媛産オレンジシャーベットにて口を整えて。
▪️メインは北海道白糠産蝦夷鹿ヒレ肉のローストに赤ワインをベースとし、レーズンやフレッシュな葡萄と共に合わせたレザンガストリックソースとのマリアージュは、蝦夷鹿のワイルドな香りを豊潤に引き出してはソースと蝦夷鹿の相性の素晴らしさに驚嘆する程に絶頂に達す。
この後の2種のデザートに焼き菓子、コーヒーを味わう頃には、興奮して一人でお料理の感動を相席された皆様の前でいつもの如くはしゃいでしまった事に後から恥ずかしいと。
久々のお料理の感動、改めて御馳走様でした。
