COLLETのパーティーに伺いました。
「Art de Vivre(生き方の美学)」という言葉の意味を、
お料理とシャンパーニュを通して体感できる、印象深い時間でした。
この日は、ラフィナージュの高良シェフがスペシャルゲストとして来店され、
お料理の説明もとても丁寧で、背景や想いまで伝わってくる構成。
鈴木シェフの一皿一皿にも、繊細さと力強さが感じられました。
特に印象に残ったのはブイヤベース。
そのままでも完成度が高いのに、
じゃがいもを使わないアイオリーソースを加えることで、味に奥行きが生まれ、
一皿の中で変化を楽しめる一品でした。
豚肉料理はやわらかく、火入れが絶妙。
ブルーチーズのムースのコクも印象的で、
シャンパーニュとの相性の良さを改めて感じました。
デザートの
ほうじ茶のブラン・マンジェ × 塩アイス × オリーブオイル
という組み合わせも新鮮で、香ばしさと甘さ、塩味のバランスが心地よく、
最後まで余韻が残るコースでした。
お料理に寄り添うガストロノミー・シャンパーニュという考え方も素敵で、
店名の意味を知ることで、より印象に残る時間に。
