ミシュラン一つ星で掲載されたとり料理のお店へ。
場所は京都市左京区、車では名神京都南ICを降りてひたすら北へ30分程。
落ち着いた雰囲気の郊外の一軒家であります。
一日三組限定、もちろん完全予約制。
元は農家の一軒家だったそう。京都市内でもこの辺りまで来ると田舎風情で大変落ち着きます。
女将さんが出迎えてくれてお座敷に通されました。
こちらでは「もみじ」という鶏種を平飼いでなんと180日間飼育されるそうです。(ちなみに地鶏は80~100日)
そしてそれをお客の到着にあわせて捌きたてを調理されるそうです。
料理はその「もみじ」をつかっての(最初に小鉢3つ)「とりの炭火焼」「とりすき」「とり雑炊」、そしてデザートです。
まずは炭火焼き、女将さん自ら焼いてくれます。
もも、ささみ等頂きましたが、これが絶品に美味しい。
鶏肉の繊維がしっかりしてて弾力はありますが、決して硬くなく旨みが筋繊維一本一本から湧き出て来るようです。
味付けは黒七味、岩塩、黒胡椒のみで。こんな美味しい鶏を食べたのははじめてかも。
こんなの絶対に市街地の焼き鳥屋では頂けません。(だってここは捌きたてだもの)
一通り炭火焼が終わって、つぎは鶏すきです。
これも女将さんが炊いてくれます。
ああ、とりすきももちろん美味しい。ちなみに野菜も無農薬の自家栽培のもの。
鶏のすき焼きって殆ど食べないけど、旨さがじんわりと染み渡ります。
これが本当の滋味ってやつです。
そしてとり雑炊、デザート(フルーツ)で〆です。
都会の焼鳥屋で食べる地鶏の焼き鳥とは全く比較にならないくらいの旨さ。
幽玄な佇まいの中で頂く絶品のとり料理を心行くまで堪能できました。
お会計は17000円/2名。また再訪すると思います。
