京都の桜の名所のひとつ、高瀬川沿いの下木屋町にある日本料理店。訪問時は桜が満開で、川面に浮かぶ花びらも美しい絶好の時期でした。
玄関前には打ち水がなされ、手入れの行き届いた植栽と蹲がしつらえてあり、この時点で早くもお店のおもてなしが感じられます。
客席のメインは、きれいに磨き抜かれた欅一枚板のL字カウンター席。どの席も目の前の鮮やかな包丁捌きや料理が仕上がっていく様子が眺められる特等席。透かし彫りの戸棚、使い込まれた包丁が並ぶ飾り棚が印象的。奥には個室もあるようです。
お昼の会席コースは、花(7,200円)と都(12,000円)の2本、どちらも税・サ込みで、前日までの要予約。ともに全9品の構成で、ボリュームは同じ、使う食材が違うのだそうです。

≪先付≫
ほうれん草と原木椎茸、えのきのおひたし
なかおちの煮凝り
何の変哲もなさそうで、出汁がおいしく野菜が旨い何ランクか上のおひたし。
目にも涼やかでひんやりさっぱりとした煮凝り。なかおちのしっかりとした旨みと出汁のおいしさがなめらかな食感とともに楽しめます。
≪お造り≫
本鮪 真鯛 烏賊 雲丹 山葵 紅蓼 浜防風
ほどよいボリューム感のある豪華なお造り。鮪、真鯛、烏賊、雲丹はいわずもがな、山葵も一級品。出汁の旨みを感じる刺身醤油で。あしらいの浜防風にも隠し包丁が入っていて感動。
≪すっぽんの小鍋立て≫
すっぽん 焼き餅 豆腐 ネギ
椀物代わりに名物のすっぽん鍋を小鍋立てで。
大市のとはタイプの違う、澄んだお出汁がじわりと沁みる上品な味わい。プルっとした食感のエンペラと、滋味深い肉。食べやすいように骨が抜かれている丁寧なお仕事。香ばしいお餅と、お出汁によく合う豆腐とネギ。夜に伺ってアラカルトでたっぷりといただいてみたいすっぽん鍋です。
≪焼き物①≫
鹿児島県産和牛ヒレ肉の炭火焼き 山葵
遠火でじっくりと焼き上げたヒレ肉。美しい色合いの完璧な火入れ。塩と山葵だけでシンプルに食べさせるのは、素材と技術に対する自信の表れでしょうか。やわらかく適度な噛み応え、広がるよい香り、あふれ出る旨みとさっぱりとしたあと味。手をかけて素材のポテンシャルが十分に引き出されたこの一皿は、ステーキではなくやはり日本料理なのだなと実感。
※掃除・トリミングの際に贅沢に切り落とされたお肉は「まかないカレー」に。
端材となったお肉を見ただけでおいしいの確定。
≪酢の物≫
焼きたて鰻のうざく 花穂紫蘇
関西風にパリっと香ばしく焼かれた鰻の蒲焼が贅沢にたっぷりと。熱々の鰻と冷たい胡瓜の取り合わせの妙。自分史上最高においしいうざく。三杯酢も美味。こっそり飲み干しました。
≪焼き物②≫
本ししゃも 若狭ぐじ 酢取茗荷 レモン
本ししゃもは、ふっくらと丸みを帯びたセクシーなフォルムに美しい鱗文様の高級魚。ふわっとやわらかくしっとり。身からも皮からもよい香りがします。
若狭ぐじは、皮目はパリッと、身はふっくら。淡白ながら味わい深く甘みと余韻のあるおいしい白身。
≪煮物≫
若竹煮
鮮度命の新鮮なたけのこ、やわらかな生わかめ、爽やかな山椒の新芽。同時に旬を迎えた春定番の出会いもの。素材の味わいを活かして極力にシンプルに料理された若竹煮。それぞれの味わいをしっかりと感じさせながらも一体感のある一品。

香の物
自家製のちりめん山椒は、小ぶりなじゃこはカリカリと香ばしい。ピリッと爽やかな実山椒がアクセント。針のように細く切られた大葉の香りがさらに食欲をそそります。ふっくらとおいしいごはんに最強のめしの友。おかわりもいただけます。
香り豊かで濃厚な旨みとかすかな渋みの赤だし。出汁の旨みが深く、キレのある味わい。香の物も美しく立体的に盛り付けられていて最後まで隙のない感じ。
≪甘味≫
自家製わらび餅
ぷるっとやわらかくとろけるような口あたりのわらび餅。上品な甘さのわらび餅に、香ばしいきな粉。甘味屋さんのそれとはちょっと違う、料理屋さんのわらび餅。おいしいほうじ茶と一緒に。

お昼の会席コースに使われているのは特別高価な食材ではありませんが、いずれも吟味されたいいものばかり。
目にも楽しめるきれいな盛り付けで、味もボリュームも大満足な会席コース。初めてでも肩ひじ張らずにたっぷり2時間も楽しめる、京都に行ったらぜひまた寄せてもらいたい素敵な料理屋さんです。
