決して目立つ立地ではないけど、雰囲気のあるお店です。
新そばのざる蕎麦をいただきました。
こちらは長岡地域では主流のへぎそばでなく十割蕎麦です。
出されたざる蕎麦はみずみずしく、角がきちんと立っていて丁寧に作られていることが一目で分かります。
色合いは新そばらしい淡い緑色をしており、またみずみずしくて一見へぎそば風でもあります。
しかし、へぎそばとはまた違うコシ。ブツン系の強めの歯ごたえです。
十割そばでこんなコシを出せるんだ。
そしてこの独特な舌触り。好きです、この感じ。
非常にレベルが高いですね。
店主はまだお若い感じですが、こんな芸術的な蕎麦を打てるなんて凄い方です。
若いだけあって、蕎麦の美味しさもこの先まだまだ無限道っていうこと?(笑)
汁は濃い目です。
表現しにくいですが、どーんと重い感じ。
本かえしに本枯節の厚切り、鯖、宗田節を合わせているという。
これだけ濃い汁を出せるということは出汁がしっかり引けている証拠です。
蕎麦が細い目なので4分の1ほどつけるといい感じ。
ズルズルっとすすると
新そばの風味、香りが強っ!!

素晴らしいです。
そば粉は北海道産とありました。
薬味はわさびとネギ。
ネギは蕎麦の歯ごたえを全く邪魔しない細さ。
蕎麦の香りに集中して無心で食べ終えました。
食べ終える直前、ちょうどいいタイミングでそば湯がきました。
そば湯はどろっどろの濃い系。
きっとそば湯はそば湯で作られているのでしょう。
食べ終えた後、あんなにみずみずしいお蕎麦でしたが
ざるの下には一滴の水滴も滴り落ちていない。
全てが丁寧でレベルが高い!!
