2回目の訪問となった下関の寿司仁さん。
10月の訪問で感動し、帰省に合わせて再訪問となりました。
【お通し】
●鰯とヌタと菜の花の和え物:脂ノリのの良い鰯で、しめ加減も絶妙でした。
【おつまみ】
アラカルトで注文しました。
●フク刺し:冬の下関でこれは外せません!厚めに切ってくれて味わい深いフクでした。河豚には味が無いと言う人は本当に美味しい河豚を食べたことないのでしょうね。白身だけにヒマラヤ岩塩との相性も抜群です!
●フクの白子の漬け:漬けは初めて食べましたが、濃厚で味に深みが出ます。日本酒に合いますね。
●フクの白子焼き:調理方法は選択出来るので焼きで注文、甘味と旨味が濃縮されて美味しいです。食感も最高です。
●のどぐろ西京焼き:白身のトロ、脂のりは抜群で文句無しに美味しい!
●牡蠣焼き、牡蠣の松前焼き、牡蠣のオイル漬け:いろは島産、小粒でしたが旨味が濃縮して美味しい牡蠣でした。
●筋子:珍味!塩漬け筋子と子持ち昆布とアボカドを有明海苔で巻いてます。それぞれの良さが生きて最高のあてでした。
●ミニトマトの甲州ワイン煮:口直しに良いさっぱり味ながらも上品な旨味がありました。
【握り】
色が薄いので気がつきませんでしたが、赤酢100%とのこと。
仁さんのシャリは温度も食感も抜群です。
まずはおまかせで
●アカイカ:地元特牛産です。食感と甘味が最高で、これ以上美味しい烏賊は無いのでは?
●しめ鯖 :済州島産の鯖。強めのしめ加減と脂のりが絶妙なバランスをとって美味しい鯖です。
●鰤:長崎産の鰤。脂のりと熟成度が絶妙で完璧な鰤でした!これ以上の鰤は食べたことがありません!今日1番のネタです。⭐️
●本鮪赤身:アイルランド産の本鮪。上品な赤身です。
●ムラサキウニ:地元仙崎産。雲丹は良い店でも外れがあるのですが、この店の雲丹は抜群に美味しいです。甘味が最高!
●本鮪大トロ:アイルランド産の本鮪大トロをエシャロットで頂きます!上質な脂で美味しい。
●芽ネギ:淡路島産。仁さんといえば岩塩と芽ネギ。本当に美味しい。
●穴子:対馬産。ふわトロで美味しく仕上げています。
おまかせは以上でここから追加
●赤貝:大分中津産。日本で1番美味しい赤貝は中津産だと断言したいくらい安定の美味しさ。
●イクラ:柚子醤油の味付けが絶妙でした。
●本鮪中トロ:部位を忘れましたが珍しい部位を切って頂きました。美味しい
【お酒】
生ビールと日本酒を。
日本酒は寿司に合う旬の美味しいのが揃っています。
以上、2人で呑んで食べて51000円。
今回も大満足でした。
本鮪とイクラ以外は全て近海産。寿司は産地で食べるのが1番美味しいと実感するこの頃です。
寿司仁は間違いなく山口県で1番美味しいお寿司屋さんでしょう❗️
