北九州市戸畑にある昭和26創業の丸喜すしさんへ初訪問。
6年前に店主が跡取りとなり街寿司からおまかせコースのみに転換された知る人ぞ知るお店。
店構えは昭和の街寿司、しかし提供される料理と握りは高級すし店である。
白魚を酒盗焼きに。
蛍烏賊のシャリ和えは茗荷と枝豆で味と食感にアクセントを加える。
河豚の白子も筍ご飯と混ぜて食感をプラス。
従来のお寿司屋さんにはない創作が味わえます。
握りは素材が1番美味しいタイミングで提供する王道。
特に鯛は鮮度と熟成の頃合いが絶妙で抜群の美味しさでした。
赤貝も地元産で東京では味わえないぷりぷりの美味しい赤貝です。このエリアの赤貝が日本一美味しい気がします。
再訪したいお店です。
