≪米炊き三年、握り八年≫
そんな格言が生まれるほど厳しい世界で、銀座の激戦区で勝負できる鮨屋が誕生するまでにいかほどの努力が必要だっただろう。
ご主人である新井氏は銀座 久兵衛 銀座本店、すし匠と日本を代表する有名店で長きに渡る修行をされた方。
その研鑽の日々は、嘘をつかない。

驚いたのは、酢の入れ方に対する気遣いと握り。
酢が入りやすいように、水分が程よくとんだ2年前のこしひかりを使用されているとのこと。
ネタに合わせて、酢の量が調節されたシャリが握られる分だけ、1回1回丁寧に板場に運ばれる。
ネタのよっては香る酢の強さが違っていて、面白い。
握りは、若干かため。
シャリの温度は、やや高め。
それが心地よくほぐれて口の中に旨味が広がる。
握りは大ぶり。
このあたりは好みだろうが、小ぶりな鮨だと満足できない私にとってはどはまりだった。

『お客様に「今日は飲んだなぁー」じゃなくて「今日は鮨食ったなぁー」って思って帰ってほしいんですよ』
仰る通りの満足感を土産に頂いて帰路につく。
近い将来、日本でも指折りの予約困難店になるだろう。
