再訪した『天ぷらあらたみかわ』。店主である小川比佐男氏の揚げ技術が、素材本来の魅力を余すことなく引き出し、天ぷらが“蒸し料理”であるという概念を見事に体現している。これは天ぷら界の天才とも称される是山居の早乙女哲哉氏の教えを継承しながら、小川氏独自の感性が見事に融合した証と言えるだろう。
今回、特に白子の天ぷらが圧巻だった。ふわりとした衣の中に閉じ込められた白子は、濃厚なクリーミーさと繊細な甘みを湛え、一口でその奥深い旨みに心を奪われる。揚げることで余分な水分が飛び、素材の純粋な味が凝縮される。これこそ、“揚げる”ことで“蒸す”という天ぷら技法の真髄ではないだろうか。
ウニを大葉で包んだ一品や、一本揚げの穴子も秀逸。衣は素材を際立たせる薄さで揚げられ、穴子のふっくらとした身の甘さやウニの濃密な旨みが最大限に引き出されていた。〆で提供されたサツマイモも、これ以上ないという黄金比のバランスで引き揚げ、甘味と香ばしさのバランスが絶妙で、最後まで感動を与えてくれる。
再訪するたびに新たな驚きと感動を提供するこの店は、ますます予約が取りづらくなるのも納得だ。今回も次回の予約をその場で確保して帰宅。『あらたみかわ』は、天ぷらの可能性を追求する名店として、これからも天ぷら文化の未来を切り開いていくことだろう。
