旦那さんのお誕生日
今年は何が食べたい?と聞くとめずらしくお鮨との答え
ならば1度はいっておかないと!と思っていた久兵衛を押さえました
賛否両論いわれていますがそれも名店ならではの宿命
全国から職人達が自分の腕を試しに集まる銀座で長年トップの座を走り続けるのには
必ず理由があり、それをこの目で確かめるべく初訪問!
お誕生日当日の土曜日の19時はほぼ満席で賑わっていましたよ
量があまり食べられない私たちはおまかせではなくアラカルトで注文
お酒は生ビールからの吉四六で
「久兵衛に35年のひよっこ」と笑う板さんは気さくで会話も楽しい
そして目の前で繰り広げられる上質な素材を繊細な職人技で次々に仕上げていくパフォーマンスは圧巻で
思わずグラスを持つ手が止まります(うそ)
どれも感動するほどに美味しかったけれど
なかでも軽く焼き付けた青柳と穴子の肝が絶品でした
握りの酢飯は都度若い子が裏から布巾でおヒツに持ってきます
温かい舎利があまり好きではない旦那さんがめずらしく進んでいました
満足してくれたようでうれしい~
そして時間を見つけてはお客さん一人ひとりにご挨拶をしてまわる大将、さすがです
名店であり続ける心構えを垣間見れた気がしました
あとはやっぱりお鮨屋さんって板さんとの出会いだよな!と改めて再確認したはちなのでした
