コリッとした歯応えに、つぶ貝独特の甘み、アワビにも勝とも劣らぬ旨さ!

キングオブ寒ぶりの名は伊達じゃないですね。口の中でサッとなくなる脂が上質

噛むほどに海の香りが溢れ出る濃厚な味わい

極上の本鮪にも劣らぬ濃厚な旨み、もう鮪いらんわ(笑)
・白子ぽん酢
・焼物 とらふぐの白子 白甘鯛
とらふぐの白子が最強グルメなのは、私が今更言う事でもないのだが、白甘鯛の焼物は白身の最高峰かと思うほど秀逸でした。特にパリッと香ばしく焼かれた皮は日本酒と流し込むしか私にはこれをいただく方法が見当たらないよ

香箱蟹の甲羅盛りはよく見るが、こちらのはちょっと違う、通常は蟹の身、濃厚な蟹味噌、内子、外子なんだけど、それに少量のしゃりを入れる事によって、より全体の旨みを増しているんだよね
これは初めていただいた
流石、寿司割烹を名乗るだけあって、つまみがやたらと秀逸過ぎ

3時間ゆっくりと蒸した鮑はサクッとした歯切れの後に濃厚な旨みが口の中いっぱいに

年に一度11月に出荷される〆張鶴の大吟醸で、山田錦を35%まで磨き上げた逸品
やわらかな果実香、ふくらみのある味わい、こりゃもうワインだね

握りは種の切り付けは大きく、しゃりは小さめでバランスがよく、お酒ともよく合う感じに調整されていますね
鮪を産地と趣向を変えて3貫だして、同じ鮪でも口に入れた時の香りの違いを楽しませる粋な趣向も見事
大将はじめスタッフは皆明るくフレンドリー
会話もはずんで楽しい時間を過ごす事が出来ました
握りは丁寧な江戸前の仕事が光りますが、とにかく酒肴が秀逸!
