ここはなんとも説明し難い、予備知識なしで訪問するのはやめた方がいいお店です。
お料理を追求したひとつの方向性には間違いがないのですが、それ故に普通のラストランのつもりで行くと満足できません。
ここは、素材を中心にしたちょっとしたおつまみのようなお料理と飲み物のマリアージュを心ゆくまで楽しむお店です。
お料理がいい状態で食べようとすると、温度や香りが抜けるのを防ぐには少量になり、突き詰めて考えると合わせるお酒は日本酒でもビールでもワインでもあり、という具合。
華やかで綺麗なお料理とはまた違った方向で探求していらっしゃるんですよね。
例えば今回頂いた山葵は、同じ山葵を擦り方で「香りを楽しむ山葵」と「薬味としての山葵」の両面を体験させてくれました。
そしてこちらはおひとりでやっていらっしゃるし、お料理やお酒の説明をとても楽しそうにされるので、時間にはしっかり余裕を見て行くべきです。
15品のコースに2品追加で、19:30スタート23:00終了くらいでした。
お店の特性を織り込んで訪問すると、これまで体験したことがない世界が広がりますよ。
