ハレクラニ沖縄の中のレストランでも一番興味があったこちらのお店になんとか予約が取れて訪問。
東京・青山のフロリレージュの川手シェフが監修しているとのことで、
川手シェフの手により沖縄素材の新たな魅力が引き出されています。
2回に分けて提供された前菜的なお料理は、
少量ですが計6品にも及び、
どんどんと沖縄らしさに引き込まれていきます。
今回興味深かったのは、
淡白なハタに黒酢とニンニクでしっかりとした味をつけたもずくをソースにした魚料理。
そして長寿食材と言われるイラブーと豚足を使ったお料理。
イラブーは観光客には馴染みがない素材だと思います。
そしてカクテルを合わせるというのがまた面白いですね。
お出汁の香りが効いたカクテルは、
飲み物としてもとても美味しかった上に、
お料理と合わせるとまた表情が変わった気がしました。
今回はのんびりひとりで宿泊していたのですが、
レストランでの受け入れも快適で、
かつ少し速くなりがちなひとりの食事のタイミングに合わせたお料理の提供がバッチリでした。
スタッフの皆さんもとても良い方ばかりでとてもいい時間になりました。
