こはだの絶妙な締め加減が素晴らしい。
4日熟成させたというネタは、しっかりとした酸味がありながら、控えめな甘みが口の中でまろやかに広がります。
漬けの赤身は柑橘の香りがほのかに効いていて、適度に水分が抜けた旨みが舌に残る…。
漬けが大好きなので嬉しくなっちゃいました。
中トロは溶けるような脂の乗り。
今朝届いたという鯵は程よい脂で今日イチ美味しかった。
あわびは肝ソースとの相性が抜群。
いつまでも噛んでいたい食感なのに心地よいのどごし。
濃厚な香りで日本酒が止まりません…。
バフンウニは状況次第で出せない日もあるというこだわりぶり。
濃厚な甘みが印象的でした。
そして煮あなごにも感激…。
指で持った瞬間に身がほどけてしまいそうなやわらかさ…口にいれると脂と身がとろけます。
史上No.1のあなごだったかもしれない…。
