店内は落ち着いていた雰囲気で、高い格式を感じます。
「料理人」の域を超えて、料理への愛・執着を感じさせる大将。
考え抜かれた調理法は独創的で、すべての料理・握りにこだわりが詰まっていました。
こちらでいただいた車海老の素晴らしさは、一生忘れないと思います。

日戻りの新鮮なつりきんめはもちっとした新食感。
玉葱にエシャレットを加えたソースは、苦みと香りが絶妙に演出されていました。
はまぐりの天婦羅は驚くほど大きくて肉厚、そしてムッチムチ。
高温でサッと揚げ、ふわふわの衣の中で余熱…という調理法だからこそ叶う仕上がりです。
(衣には炭酸を混ぜ、冷凍庫で冷やした打ち粉との温度差で一気に膨らませているそうです)
真鱈の白子はボイル加減が絶妙でふるふる、出汁の効いたポン酢との相性が最高でした。
メジマグロの塩たたきは優しい塩気の海苔の佃煮がベストマッチ。
握りは優しくて、お皿に置いた瞬間にふんわり沈む。
口に入れるとやわらかくほどける感じがたまりません。
あじはすりおろされたあさつきが乗っていて香りが最高。
車海老は宝石のような透明感のある輝き!
(これがどうしても食べたくて訪問したと言っても過言じゃない)
油で一瞬・一層だけ揚げることで、ボイルのように身が縮んだり白濁したりせず、生とは違った食感を楽しめます。
この調理法によって味噌が全身に回るらしく、殻・頭を外しているのに味噌の味かするのも感動でした。
海老の赤だしは、お味噌をほぼつかっていないらしく、海老の風味が全面に。
たまごやきはまるでカステラのようなふわふわしっとり食感でほぼデザートでした。
(これも研究し尽くして3日寝かせているそう…!)
大将が骨董屋で運命的に見つけた九谷焼のアンティーク皿にお寿司を置いていただけるのも素敵でした。
日本酒はご自身がお酒好きという大将のチョイス。
東京で手に入りにくい花陽浴もいただけて嬉しかったです。
