“鳥”と名前につくのに、鶏肉がほぼ出ない新宿で半世紀を超える老舗やきとん「鳥茂」。
昔は串に刺した肉は全て”焼き鳥”と呼んでいた時代からの慣習を引き継ぎ、現在3代目の大将により、古きを生かし新しさを取り入れた令和の「鳥茂」がここにある。
2階の大将前カウンターがスペシャルシートでありがたくもお誘いをいただき久しぶりの訪問を果たした。
色々居酒屋系のやきとんはこれまでも食べたことがあるけど、この店ほど火入れの素晴らしい店は珍しいだろう。
ほぼレアに近い湯引きはもちろんのこと、表面に熱を通した程度の絶妙な仕上がりのレバーや、柔らかさや脂身の旨さを残したシロなど、肉やモツのことを徹底的に理解した下処理と仕上げ。
どのさらにもたっぷり添えられた練り辛子は脂身の旨さと相まって辛味を適度に押さえながらいいアクセント。
タンのサクサクした食感やはらみの柔らかな感じなど何処ぞの焼肉店も舌を巻く焼き具合だろうと思う。
もちろんモツそのものの素材や下処理もよく、臭みは一切感じない。
牛豚鶏が全て入っているというつくねはいつも食べている鶏つくねとは別次元の旨さ、
スペシャリテの肉ピーマンもピーマンの苦味と肉の旨味が最高に合っている。
贅沢にも松茸と肉と生卵というワイルドながら豪華な1皿もいただけ、久々の鳥茂の変わらない迫力を体感した。
めっちゃ酒飲み仕様で塩味濃いめなのが健康的には心配ではあるものの、たまにはこんな罪悪感たっぷりの食事もいいだろうと思う。
お茶も大変美味しかった、以前より量は少なめになったとはいえやはり破壊力抜群で大満足の鳥茂だった。
