ミシュラン熊本大分版では2つ星を獲得、
東京西麻布の寿司屋で修行をした店主が江戸前の技術をベースに熊本近海の魚を握りあげる。
まさに、熊本でしか食べられない鮨をいただける「仙八」さん。
前回訪問時はランチで握りのみだったけど、ディナーは久々。
この時期なのでどの店もコロナ対策をしているけど、
こちらはお客1組ごとにアクリル板で仕切りを入れた上で、
カウンター内外もアクリル板で取り囲むという対策バッチリの状態になっていた。
こちらのつまみは本当に酒を飲ませるなあ。
イワシに焼きなすソースを合わせたり、牡蠣をバルサミコ酢で仕上げたり、
この時期ならではのシャクを塩辛にして茶碗蒸しに合わせたりと、
結構味は濃いめなんだけど独創的で大胆な組み合わせが楽しめる。
握りも2週間熟成のねっとりしたアオリイカや、
トコブシの肝を使ったリゾットなどのスペシャリテもかなり個性的。
ただ熊本近海のネタを楽しむだけでなく東京で修行した大将ならではのワザが活きる。
赤酢のシャリも前回ランチでは大きめに感じたけど、今回は程よい。
聞いてみると握りのみだと大きめにしてるそう。
お酒もそれなりに楽しんで1人20000円を切るというコスパも嬉しいところ。
この時期でも満席の人気なのも頷けるなあ。
