銀座一丁目にある日本酒がウリの小料理屋「みを木」。
芸大出身の女将が揃える日本酒に、日本酒にピッタリの料理が10品以上次々と出てくる。
1年ぶり8回目の訪問、提供時間があまりにも遅すぎたことで足が遠のいていたが、
コースを4,800円(ご飯無し)と5,800円(ご飯あり)にしぼり、
料理人を増やしたことで体制がだいぶ変わったという噂を聞き久々の訪問。
いつの間にかビブグルマンにも選ばれる人気店になってしまった。
5,800円コースに追加料金1,000円でシメのご飯をウニご飯に変更してもらった。
もちろんアラカルトもあるが、混雑時は時間がかかるので基本はコースがいいだろう。
この日は18時過ぎに店に入ったので最初はテンポよく出てきたが、
やはり19時以降になると店もほぼ満席となり、多少時間がかかる状態にはなったが、
21時過ぎには終了したし、さほど遅さは気にならなかった。
ただ、基本的にはゆっくり2.5時間はかけてお酒と楽しんでもらうというスタンス。
久々に、みを木料理の真骨頂を味わった。
最初のスープも夏らしいヴィシソワーズを和のテイストで作り上げ、
ほっき貝やホヤにフルーツを合わせるという手法もこちらの店ならでは。
ももを紹興酒漬けにするあたりも、フルーツをうまく酒のアテに仕立て上げている。
イワシをなれずし風に仕上げたり、
鮑の天ぷらに添える肝にはバターを合わせたりと、この独創性はすごい。
バターたっぷりの肝は食べたことのない豊かな風味でわさびの辛味をマイルドにまとめてくれる。
鰻や和牛など素材も多様に展開し、飽きさせない。
そして最後の雲丹ご飯はやはり圧巻の美味しさ。
あらかじめご飯に雲丹を混ぜ込んだ上で、さらに上に乗せる。
もう雲丹だらけのご飯なのだ。
なんだかんだ結構呑んでしまったのでお会計は1万円ほど、でも安い。
やはり旨かったし、オペレーションもだいぶ良くなったし、
これはまたローテーションに入れて通うことにしようっと。
