関東人の私には、鱧は貴重な食材だけれども、さして、美味しいイメージはありませんでした。
が、今回は、【鱧しゃぶ】。鱧をしゃぶしゃぶすると、こぉぉぉぉんなに美味しいの???
もう、孤独のグルメばりに
『いや~~~。びっくりした!』
もちろん、出汁も美味しいわけです。
鱧を、しゃぶしゃ・・・ぐらいで引き上げ、外はふわっ中はこりっぐらいで、
お皿に入れたら、生揚げ醤油を絞ったときに出来る【醪(もろみ)】を耳かき1杯程度乗せて、パクっ!
あぁぁぁぁぁぁ。美味しい!!!
温かい鱧の美味しいこと。鱧大好きになりました。
このお店のすごいのは、翌朝、体がラクなんです。
これが、発酵の力なんだな。と、実感。
