釜山南浦(ナンポ)の「맛찬들 왕소금구이 남포점」(マッチャンドゥル ワンソグムグイ 南浦店)へ。去年の10月に釜山に来たときも食べに来ていて今回再訪。
熟成肉を使ったサムギョプサルのお店。豚肉は14日間熟成肉させているそうだ。お肉は熟成三枚肉(숙성 생삼겹살:スクソン・サムギョプサル)と熟成首肉(スクソン・モクサル:숙성 생목살)がありどちらも一人前130gで10500₩。前回より500₩値上がりしている。
普通のお店だと1人前200gぐらいで7〜8000₩が相場だから現地では高級店の部類だが、平日夜でほぼ満席の人気ぶり。週末は並ぶことも多いそうだ。
焼くのは店員さんが全てやってくれる。ハンドガンみたいなレーザーポインタ付きの非接触式温度計で鉄板の温度を細かくチェックして、220℃になったら焼き始めるそうだ。肉を焼いているときも時おり肉自体の温度を測っている。
ワンソグムグイとは荒塩焼きという意味で、小皿でピンク色の岩塩が提供される。サムギョプサルは辛味噌(サムジャン)をつけて野菜で巻いて食べるのが一般的だが、こちらではシンプルに塩で食べるのもオススメだそう。熟成されて豚肉自体の旨味が強いので、塩だけでも十分美味しい。
付け合わせの惣菜(パンチャン)は種類豊富で色々付いてくる。特に好きだったのはネギとモヤシの和え物。食感がシャキシャキで、味付けは粉唐辛子と酢が使われていて、適度な辛みと酸味があるので、豚肉の合間に食べると口の中に残る脂がリセットしてくれる。
4人でサムギョプサル2人前とモクサル2人前を頼んだけど、やっぱり1人前130gでは足りずに結局サムギョプサル2人前を追加オーダーした。ソウルや釜山の他のお店のサムギョプサルも食べたけど、やっぱり今まで食べた中でここが一番美味しかったな。
今回の締めは「속초 명태회 막국수」(ビビン メミル マッククス)6500₩。ビビンは混ぜるでメミルはそば粉、マッククスは野菜などが入った冷たい麺料理のこと。日本の蕎麦とは違って押し出し麺なので冷麺のようなグニっとした弾力がある。
