家族で台北に遊びにきて、観光の途中、ガイドさん推奨な、対岸の大陸福建福州菜と素菜の店へ。
ごくごく淡い調味と絶妙な油使いで、軽いのに滋味深い、身体に染み入るような味わいに瞠目。
まさに風味絶佳。
お茶の実を絞って精製した油を絡めた麵線、軽く粉を叩き、パンフライで仕上げ、胡椒でお化粧した鮎、ニンニクと醤に頼らぬ野菜炒め。
これがあるんだという驚きと、これでいいのダ! という赤塚不二夫師匠的な納得。
普段、わたくしどもがいかに塩と砂糖、油脂に依存した調味に淫しているか、そしてそれがなくても感じられる佳味というのがある、ということを再確認出来る。
