ホーチミンのガイドブックには必ずと言っていいほど登場するPHO HAO。
まだ気温が26度だった早朝に行ってみました。フォーを完食完飲するとかなり体温が上がりますからせめて一日でもっとも気温が下がる朝に食べちゃおうと。
1階は食堂風ですでに数組のお客さんがフォーをかきこんでいます。朝早いので、2階はまだ解放されてません。テーブルの上にはトッピングのセットが置かれていて、ここはジブンたちのような日本人ビギナーでもいとも簡単に食べれちゃうフォーレストラン。食べたいものを決めてただ告げるだけです。

どちらも65千ドン。325円。有料のトッピングも乗せたので+4千ドン、は20円。
運ばれてきたものを見ると明らかに思想が違います。牛肉は半生牛肉以外のトッピングはほとんど乗ってなくて、後乗せの思想。鶏肉は牛肉に比べれば多めにトッピングされてます。
牛肉のスープ。濃厚なコク味が深いスープがいいですね。動物系と調味料がバランスよく使われていてさすが老舗の人気店の味は人々を魅了する何かが違います。スープを味わったところで、バジルとパクチの葉っぱをどんどんちぎってオン。もやしもオン。ライムは途中から味変に使います。
葉っぱがしんなりしだしたら戦闘開始。いやあ、スープがまた一段とコク味を増した感じですいすいイケちゃいます。チェーン店のスープとは一味ちがいますね。パクチは葉っぱが日本のものとは違い、こちらのは強烈です。食べれるようになってよかった。
平打ちのフォーはいかにも体によさそうな米線で、これだけを食べていたらきっとヘルシーでしょうね。朝フォーの後ホテルに戻って、クラブレストランで2回目の朝食を摂るから太るんです。牛肉はスライスを塊にして入れるため、表面はスープで軽く火が通り中は生。柔らかくておいしい牛肉でした。
朝はフォーに限りますなあ。
