特に、キンキと帆立が入った海鮮スープは、
創作和食を思わせるような見事な味付けで、
すりおろした大和芋との調和が素晴らしい一品。
肝心の握りは、北海道らしい新鮮なネタで勝負してくる。
厳選した素材を高度な技術力で丁寧に仕上げていく
そんなイメージと言えば分かり易いかもしれない。
さらに炙りや昆布〆、酢〆、そのどれもが絶妙な加減でなされており、
食材の旨みがストレートに伝わってくるよう計算されているようだった。
札幌で技巧派の江戸前寿司を目と舌で楽しめるこちらのお店は、
ミシュランの星に恥じない、素晴らしい鮨屋であると感動した。
