大阪・北新地の「弘屋」で行われた合同誕生日会。7月の終わりにこれほどリッチな夜を迎えられる人は、日本の人口の0.001%くらいではなかろうか。
幕開けはドン・ペリニョン1978と枝豆のシェリー蒸し。「僕らの最高の誕生日会」の始まり始まり!
前菜のラインナップもなかなかのモノで、ウニとジュンサイの清涼感、自家製コンビーフサンドの背徳、グジェールのカリフワ感、生牛肉の柚子セビーチェのからみのキレ。前菜で既にフルコースを終えた気分になる。
桃のカッペリーニにはシュロス・ゴベルスブルクのリースリング2015。桃の甘やかさとリースリングの酸が溶け合う。さらにトマトの白ミソ椀に合わせたコングスガード・シャルドネ2021がまた憎い。和とカリフォルニアがこんなに仲良くできるとは思わなかった。
ハイライトのひとつは松茸キャビアご飯。そこにメゾンルロワのボーヌ1978を合わせる暴挙。震える美味さとはまさにこのこと。続くジュンサイとパプリカのアイスにはエシェゾー1978。ピークは過ぎているが、余韻に漂うグラン・クリュの威厳は失われていない。むしろ「老いてなお美しい」とはこのことか。
甘鯛のウロコ焼き、翡翠茄子と流れるように料理が続き、メインは岡崎牧場の長期肥育牛のカツレツ。脂の質感が見事で、シャトー・ラヤス ピニャン2006と噛み合って「北新地の夜はここに極まれり」と唸る。
さらに鮑と黒トリュフのリゾットで贅沢を重ね、アラビアータで締めにかかる潔さ。デザートのブルーベリーケーキに、50年熟成のスコッチ、アーマー12年をソーダで割るという大人の余裕。普通なら暴挙だが、ここではただただ粋。
菅沼シェフの料理と、ワインの数々に抱かれて大団円。もちろん来年も開催確定。いや、むしろそれまでに何回もやりたい。
