虎ノ門ヒルズという華やかな商業施設の中にありながら、そこだけが周囲から少し隔絶された「無機質なドアと小さな看板」のみという佇まい。そして店内の「東京タワーの輝きと美しい白木カウンター」の華やかさ。このギャップ(コントラスト)こそがKoumeiが提供する最大の魅力である
静かな序奏から始まり、中盤の技巧的な一皿、そして圧巻のクライマックスへと続く流れは、まるで一曲の壮大なコンチェルトのようであった。これでオールインクルーシブ22Kは満足感が高い
■ 序盤:視覚と嗅覚を揺さぶる「前奏曲」
• うにパフェ: 幕開けは、目にも鮮やかなサプライズ。ウニの甘みが口いっぱいに広がり、贅沢な夜の始まりを告げる
• メジマグロのスモーク刺身: 燻製の香りが鼻腔を抜け、玉ねぎ醤油の力強い旨味が後を追う。この香りの余韻は、ワインや日本酒を愛でる大人の会話を弾ませる
• 香箱蟹の茶碗蒸し: 冬の女王、香箱蟹。蟹身の甘みが、温かい出汁に溶け込む。寒い冬で冷たくなった手を温めるような、優しい一皿
■ 中盤:職人の技が光る「技巧派の連弾」
• 鮑の酒蒸しと肝ソース → シャリ投入: 柔らかく蒸し上げられた鮑そのものも絶品だが、残った濃厚な肝ソースにシャリを絡める瞬間。これこそが「背徳的なまでの幸福感」である
• キンキと白子のしゃぶしゃぶ: 脂の乗ったキンキとクリーミーな白子。異なる「とろけ方」が口の中で混ざり合う、この日最も官能的な一皿だった
■ 握り:伝統と個性の「変奏曲」
中トロ、赤身漬け: マグロの質の高さは言わずもがな。漬けのねっとりとした食感に、職人の丁寧な仕事が透けて見える
• コハダ、スミイカ、鯵、サヨリ: 江戸前の華。特にコハダの締め具合や、スミイカの歯切れが素晴らしい。丁寧に仕込まれた鯵は、青魚特有の清涼感がありつつも、驚くほど脂の甘みが乗っていた
• アカガイ: 磯の香りと独特の歯ごたえ。鮮度の良さがダイレクトに伝わる
■ 終盤:心地よい余韻の「終止符」
• あん肝と胡瓜の手巻き: 濃厚なあん肝に、胡瓜の清涼感。この対比は、複雑な和音から清らかな旋律へと移るような、心地よい驚きを与えてくれる
• 穴子、ギョク、味噌汁: ふんわりと解ける穴子で締めくくり、出汁の効いた味噌汁で体温を整える。最後の一口まで、計算し尽くされた構成であった
