昨年、ミシュラン3つ星に輝やいたこちら。
深く納得できます。
日本伝統の技に加え、これまでの技に
疑問を投じ、そこに一捻りを加えることで、
オリジナリティを出す、という大将の技。
なおかつ、調味料をほぼ使用せずに、
素材の持ち味を最大限に引き出し、
素材の皮などから創り上げる出汁や
塩と、その手間のかけ方は、気が遠くなるほど。
一皿一皿に、膨大な手間暇がかかっているのに、
まったくそれを感じさせない「素の美」
そのものです。
静かにカウンターに現れた大将は、
客一人一人に丁寧に挨拶を済ませ、
蛸を切る作業から始めます。
では、この日のお料理です。
1,聖護院大根の潮煮
水と塩だけ。
その水と塩に、大根の甘味が
合わさり、旨味へと変貌します。
2,橙
おおぶりな橙の中に、
源平なます。
源平は、赤白を意味し、
赤貝と、帆立貝が。
それをあんぽ柿で和えています。
橙の蓋を大将があけて、その上半分の
橙の果汁を絞ってくれます。
あんぽ柿の甘味と橙の果汁の酸のみで、
調味料は不使用。
調味料がないからこその、調和です。
3,お造り
「関東では、お刺身ですが、
関西では、刺すを嫌い、お造りに」と
大将。
明石の蛸と鯛。
この明石の蛸が、この日明石から
届いたばかりで、お箸でつつくと
弾き返してくるほど弾力があり、
これには、かなり驚きました。
自家製蛸塩
鯛の頭の出汁の鯛醤油
鯛の塩水で。
自家製蛸塩も、膨大な作業で
できていて、刺さるような塩味では
なく、むしろ蛸出汁の粉末という感じ。
蛸は、あえてぬめりを取らず、
蛸本来の持ち味を活かしています。
なぜ、ぬめりと取るのか?という素朴な
疑問を常に持ち、それに果敢に挑戦する
大将です。
4,お椀
白味噌仕立て、
金時人参の梅人参
鼈の出汁の胡麻葛餅
梅人参というと、梅型にした人参のことだが、
大将は、梅の出汁で梅の風味がする梅人参を
考案。 しかも、繊維感を出すため、切り方も
一工夫。
さらには、梅の酸で、白味噌を飽きずにいただける
ように、とのこと。
人参のはずが、梅のお味。不思議な感覚でした。
5,鮪の藁炙り
皮目が、ぱりぱりに仕上がり。
柚子の皮と綿の柚子おろしですが、
なんと、大根汁をゼラチンで一度かため、
それをおろしと合わせています。
なので、一体感があります。
さらに、柚子汁、大根、葱のちり酢を。
素材と素材を合わせる技です。
6,蟹の蕪蒸し
浜坂の雄のズワイ蟹です。
周囲には蕪の皮の出汁と、
蟹の甲羅を米油で合わせ、
乳化させたすり流しを。
米油を使うことで、全体の
馴染み方が全く違います。
5,鰯の絹巻き寿司
こちらの定番です。
黄身まで白い薄焼き卵の生地に、
鰯の頭、骨、尻尾を揚げたもの、
寿司飯、
その上に、衣をつけて揚げてから
炭火焼したマルマルとした鰯をのせ、
包んでいただきます。
鰯の衣の食感がさくさく。
この衣にも、手間暇がかかっています。
6,黒荏胡麻
白荏胡麻と黒荏胡麻がありますが、
黒のほうが、香りも栄養価も高いそう。
大将が、目の前で、丁寧に摺り、
そこに、金柑と、茹でて甘酢漬けにし、
実山椒と合わせた牛蒡を別々に
絡ませます。
さらに、極細に千切りした牛蒡に、
濃口醤油、黒糖、真っ黒酢を合わせ、
たっぷりあしらいます。
「モンブランみたいでしょ?」と大将。
豊かな風味、食感のバリエーションが
押し寄せます。
7,お揚げからすみ餅
初午稲荷にちなんで、お揚げです。
お揚げの中にからすみ餅が入っていて、
それを揚げてから、炭火焼に。
言わずもがな、おいしすぎます。
8,海水
残念ながら、前回いただいた宮津の
海水は、今、使用できない状態とのこと。
変わりに、水、塩、にがりで作った
海水を。
9,手打ち十割蕎麦
その海水に、つけていただきます。
そばつゆに合わせた蕎麦です。
10、茶色マルハタ
炭火焼
ハタの品のある旨味が塊になっています。
11、鹿児島の真鴨
秋田の三関セリ
真鴨はつくねもあり、
旨味を吸っています。
ここで初めて、昆布と鰹節の
出汁を使用。
これは、調和を取るため、とのこと。
12、ご飯
つやひめです。
春菊の赤出汁

13、甘味
京都 蕗の薹の淡雪餅

ここで、蕗の薹をもってくる
センスに、感動。
お皿は、冬景色で、雪の下の
蕗の薹を彷彿とさせます。
14、甘味
いちごの汁粉
なんと、餡といちごが合わせてあり、
最後まで技あり。
