白金高輪駅すぐのところにある和食店。雑誌「GOETHE」の「ゲーテイスト2024」にも掲載されました。
店主の渡邊大将(だいすけ)さんは、おでんなどで有名な学芸大学の「件(くだん)」で経験を積んだ後、三軒茶屋で名居酒屋「鈴しろ」を開店、その後、自分の料理を突き詰めるべく「サンプリシテ」「チャイニーズレストラン4000」などで研鑽を積み、2021年に「わたなべ」をオープンしました。
店内は凜とした白木の一枚板の8席のカウンターで、カウンター席の少し離れたところにあるステージのようなオープンキッチンで、渡邊さんが調理をします。
「素材を活かす」「なるべくシンプル」「オリジナリティ」の3つを大事にしているとのことで、最初に出てくる「枕崎産の本枯節と真昆布でとった出汁」が、まさに素材の良さを活かしたシンプルでオリジナリティながらも味わい深く、旬の厳選された食材のコース料理を堪能しました。
