表参道の宮坂は、静謐という言葉がそのまま器に盛られたような日本料理店だ。店主・宮坂展央氏は、東京の和食店で十一年、基礎という名の重力に身を預けた後、京都三つ星「未在」にて約十年、季節と向き合う厳しさと美しさを叩き込まれた。その料理は饒舌さに頼らず、出汁と火入れが確かな文法で味覚に届く。流行の外側で、ただ「うまい」という真実だけが、淡く、しかし強く残る一軒である。以下、コース内容。
