天保元年から息づく神田いせ源は、どじょう屋として生まれ神田に根を下ろしてあんこう鍋の名店へと静かに成熟した店で、肝を溶かした秘伝の醤油の鍋には江戸の記憶がにじみ、身も皮も内臓も余さず冬の滋味として整う。昭和初期の木造建築が街の喧騒をやわらかく吸い込み時間そのものを器にして佇む中、鍋の旨みをまとった〆のおじやが目の前で静かに仕立てられ、深くやさしい余韻だけが胸に残った。さらに、あんこうの卵巣を干して炙り熱燗に浸した華臍源酒は香ばしさと甘いコクが酒に溶け込み体の芯まで染み渡り、結局こういう老舗は決して人を裏切らないと確信させる夜だった。
