昨年、北海道ミシュランガイドが発行されたが、そこで三ツ星
に輝いた4店の一つがこの店だ。
さっぽろには、すし善というすしの名店があるが、その店二つ星
を抑えて、また若いこの店が選ばれた、結構おどろきを持って
うけとめらたようだけど、それだけの実力があると評判だ。
運よく予約がとれたので行ってみた。
大将に聞いてみると三ツ星を取って一番変わったのは、外国人
の客が増えたことだという。ミシュランの☆は、外国人の方が
影響力が強いそうだ。夏場は予約を取るのが難しいそうだが、
寿司が一番おいしい晩秋から冬は、予約が取りやすいそうだ。
最初は、タコの柔らか煮、からすみ旬菜。いい店は最初からや
られたと思う事が多いがこの店も例外ではない。たこの柔らか煮
これがものすごくおいしい。旬菜もたしの中に酢の酸味がここち
よく、味のつけ方も絶品だ。
ヒラメ、エンガワ、特にエンガワは今までたべたことないおいしさ。
天然物のホタテ、この味わいはまたすばらしい。この濃厚な味は
天然物の特徴なのか。
アスパラ、むらさきアスパラの特徴だろうが、甘く上品な味わい
これも人生初めての体験かもしれない。
しゃりは、名店に多いゆるいにぎり、ゆるい中にかすかに酸味と
お米の旨味を感じるが、シャリを主張しすぎることはなく、口の
中に溶けて行く。
三ツ星店に訪問するのはこれが初めで、三ツ星にふさわしいか
どうか言うような資格はない。でもすばらしい寿司店であることは
間違えない。
でも、北海道という地の利は生かせてのことだとは思う。素材の
よさ。それを半分以上が地元素材で、他の地方よりも先に押さえ
られ、鮮度のいいうちに使うことができるからであろう。
その有利さを十分に生かしている。
お値段も東京のどんな三ツ星店よりもはるかに安い。8000円から
高くても13000円のお値段で頂ける。
今回はお酒でなく、スパークリングワインと、白ワインで寿司を食
べてみた。ワインはお高いものではないが、この選択もすばらしく、
おいしく頂けた。
北海道出張、他の店でもいいもの食べたが、この店に行けた事、
これだけで、私としての目的が達せられたというか、それ以上の
感動を与えてもらった。
