ここでしか食べられない絶品の四川料理、去年は7回も行ったのだが、今年は5月になって初めて、本当は4月仲間と贅沢づくしの食事会をする予定だったが、厨房のトラブルで延期になってしまった。お店のシステムも変更になり、火鍋のコースが加わった。8500円からになる。通常のコースは20000円から、以前は10000円でもやってくれたが、少し値上げした格好だ。
今回は以前の麻婆豆腐会のレビューを見て是非とも行きたいとリクエストを受けての訪問。前回は6種と多かったが今回はその中から3種類だしてもらった。

いやーこの3種の辛いこと、前回は量が多かったの苦しかったが今回なんとかなった。とはいえ大量の汗をかき、頭はお風呂上りのよう。最初四川宮廷風麻婆豆腐が一番山椒が効いている。まろやかな山椒と刺激の強い山椒の2つを使い絶妙の香りと刺激がある。
町場の麻婆豆腐は羊肉を使っているが特徴で、山椒はやや控えめでストレートに辛い。
幻の麻婆豆腐は400年前のレシピを再現したものだと言う。辛さの中に甘みのある特別な豆板醤を使い、豆腐手作り、豆腐の苦みが出ないよう包丁ではなく手でちぎられている。これは最高の麻婆豆腐だろう。
すっぽんのスープも最高だった。普段高い食事会でした出たことのない物で料金が上がっただけあって通常のコースもグレードアップしている。
ふかひれの味も最高。この餡の味は他では味わえない。さすが趙楊である。
