知り合いに誘われてご相伴に預かりました。お料理は特に印象に残ったものの感想。
先付 タコと子持ち昆布
子持ち昆布は粒が大きくて過去に食べたこもち昆布で一番美味しかったです
お造り
ぶり、カンパチ、中トロの3点です。ブリはねっとりと脂が乗っておりました。なかなかこのクオリティの刺身に合うことはありません。
カツオのたたき
大きなカツオで厚めに切った間に包丁を入れニンニクや青ネギなどを挟む一手間が入っています。肉厚ですが臭みもないので薬味なくてもいいぐらい。
穴子の骨
パラパリでウナギの骨よりも柔らかくてこれだけ何杯も飲めてしまいそうです。
タチウオ塩焼きとイチジクワイン煮
タチウオはふんわり柔らかくてシンプルだけど絶妙の塩加減が身の甘さを引き立てます。付け合わせのイチジクはこんな小さいのあるんだと思いましたがワイン煮されていて甘くて芳醇な香りがいいですがイチジクのクセみたいなものはなくてとても美味しい。
ここからお寿司。
平貝
あまり食べませんがこれでたいらぎ、と読むそうです。ずっとたいらがいだと思ってました汗
甘さと歯切れが良かったです。
車海老
生か蒸しかを選択できます。生でいただきましたがプリンプリンの歯応えでねっとりではない甘さです。あとから味噌や頭、尻尾の塩焼きなど一匹丸ごと余すことなく提供されます。
穴子
塩とツメの2種。塩は珍しいなぁと思って食べるとウナギのように白焼き的なのを想像したらこちらもしっかり甘く煮てありました。肉厚でほろっとした穴子最高です。
蛤のお吸い物
蛤の出汁だけで作ってるようなシンプルなお味。塩も最小限だと思いますが椀に入ってる以上に蛤は入れてるんじゃないかなぁこんなに濃い味が一個から出るとは思えない。
