お造りと醤油替わりの栗の粉(2014.10)

今年初の訪問は3月に。
店内に入ると、「今日はすごく良いふぐが入ったのですよ。」と星野さん。
あら・・3月のお献立には河豚はもうないと思っていたので、嬉しい誤算。
まず蒸し寿司でスタート。
錦糸卵の黄色が目にも鮮やか。
なかのお寿司は2種類の炊き方をしているそうで、小品ながら手が込んでいます。
やわらかな味わい。
次に新たに購入されたという小さな漆の上品な器が登場。
なかには鹿児島の筍とわかめ。お出汁が美味しい。
春を感じます。
新鮮な赤貝とアオリイカの酢味噌がけ。九条ねぎを添えられて。
さらに、セリの胡麻和え。
さりげない一品に心が和みます。
ここから、この日の主役、下関の天然フグさんが登場。
まずは、大きな白子が2個。
ちょっと焦げ目がついてとても良い感じ。
なかはアツアツでとろっと。絶品です。
次はお刺身。身が厚く、弾力がすごい。
量もお皿いっぱいで、食べ応え十分。
フグの最後は、さくっと揚がった大きな唐揚げ。
星野さんの技で、丁度良い按配で。
お魚とは思えないような肉々しいような食感。
思い切り星野さんのフグを堪能できて、大満足。
そして、お待ちかねのお椀が登場。
お出汁はこれ以上濃くても薄くてもという絶妙の按配。
しみじみとした優しい味わいが大好きです。
焼き物は、甘鯛の松笠焼き。
炊き合わせは、先ほどの鹿児島の筍がわらびとともに。
〆はいつもの土鍋で炊くご飯に、ご飯がすすむ松坂牛のしぐれ煮、じゃこ、お漬物、赤汁。
最後に、わらび餅。
ドリンクが平均2〜3杯で、ひとり35000円ほど。
若い方が厨房にお一人増えたそうで、
じきにその日の即興の一品なども作ってみたいとのこと.
それも今後の楽しみに。
秋にはいよいよ、地理的にはそれほど遠くないですが移転されるようです。
