木曜日の夜です。
三越前です。
七ヶ月ぶりにこちら、【貴山】さんにお伺いしました。
予約は六時半。
ちょいと早めに到着しましたが、行燈に灯りが灯っていたので、イソイソと暖簾をくぐります。
仕込み中でしたが、その金森氏、破顔一笑!
『いらっしゃいませ、xxxさん、どうぞお好きなところにお座りください』
おっ、覚えているんや。
二回目なのに、そりゃあ事前に予約客の名前を確認されてはいるだろうけれど、折敷を見れば今夜は七名。
その中からピンポイントでご指名されるとは・・・、あっそっか、おひとり様はラッコだけだもんな。
でもそれはともかく、京味仕込みの柔らかいおもてなしは、他の京味系より鼻ひとつ抜けているのかも。
他のお客様がお見えになる前の五分ほど、静かに西翁との思い出話を語る金森氏。
『独立するとみなさん自分の色を出すようになりますが、私は京味の本質からブレません。
大将から教えていただいたものを、愚直に守り続けます。
それはやっぱり、大将の料理に対する考え方、お客様への接し方、食材を無駄にしない仕立て方が一番ですもの。
私などはまだまだその足元にも及びませんし、決して超えられるとも思っておりませんけれど、皆様に「京味を、西大将を思い出すよ」と仰っていただけるよう、頑張ります、アハッ\(//∇//)\』
