お店の大将とは門前仲町にある行きつけのコーヒーショップで知り合い、本日初訪問させていただきました。
こちらの大将、神楽坂の名店・小室での修行を皮切りにロンドン、オーストラリア、シンガポールの和食店を経て3年ほど前に森下で開店されたとのことです。
今度のミシュランに載るかもという噂⁈
雲丹・鰆・鯛・鱧・蛤・金目鯛・鯵・海老・太刀魚・小鮎・塩雲丹とお口直しのシャーベットとトマトを挟んで旬の海鮮のオンパレードです。
それらを揚げ+和え・刺身・茹で・お椀・しゃぶしゃぶ・焼き・揚げと多彩な料理方法で提供してくれます。
どれも主役級で本当に美味しいです。
料理の最後は、猪・牛・よもぎ麩・真竹の筍の煮物。
これが甘じょっぱい煮汁の中で2種類の肉それぞれの味・よもぎ麩のねっとり感・筍のシャキシャキ感が一体となり、とても美味しい。
そして〆のご飯は鱧ご飯。
事前に料理は少なめでお願いしていたので、ご飯を食べる余力はまだ少し残っています。
ふっくらした鱧とご飯が美味しい。
梅肉を和えるとまた美味しい。
途中の鱧料理の梅肉が片付けられず残っていた理由がここでわかりました。
やはり和食屋さんのご飯は美味しいなぁ(^^)
大将のお話も面白いし、お隣のお客様との会話も弾んでとても楽しい食事でした。
また違う季節に訪問したいですね。
