福岡・今泉にある「今石飯店 涼華」さんでランチ。
ランチはおまかせコースのみの提供。中華に和のエッセンスを織り込んだ、美しい流れの料理たちを堪能しました。
■前菜4種
・茄子の揚げびたし風に枝豆とみょうが、薬味たっぷりの和え物
・コリコリとしたくらげに胡瓜の合わせが爽やか
・蛸の薄切りにトマトと大葉、食感も楽しい中華風カルパッチョ
・いさきの刺身に香味ダレがかかった一品、酒の肴感もあり
■甘鯛の上湯(シャンタン)スープ
黄金色に澄んだ中華の極上スープ。中には筑前煮を思わせる根菜の具材。
伝統中華の「上湯」に、博多らしい和の滋味を重ねたような印象で、やさしくも深みのある味。
■あなごの天ぷら(小海老とネギの山椒炒めのせ)
ふっくら揚がった穴子に、香ばしい小海老と葱炒め。ピリッと山椒が効いてアクセントに。
■焼き餃子
皮はパリっと香ばしく、中はジューシー。黒酢と自家製ラー油をお好みで。王道ながら品の良さが光る。
■エビとマッシュルームの揚げ物(チーズ添え)
衣に包まれたボリュームのある海老の香ばしさと、とろりとしたチーズソースが意外にも好相性。
■赤いさきの蒸し物(唐辛子風味)
ふっくら蒸された白身にピリッとしたタレ。下には紫野菜(ツルムラサキ?)のような添えも美しく。
■豚ヒレの黒酢酢豚
香ばしく揚がった豚ヒレに、しっかりコクのある黒酢ソース。ズッキーニやピーマンが彩りと食感を加える。
■黒毛和牛と自家製エクソージャンの炒飯
香ばしさ全開!ふんわり卵とごろっとした牛肉に、旨味の強い自家製ジャンが効いていて絶品。
■締めのチャンポン
濃厚ながらまろやかなスープに、香ばしい干し海老、揚げ野菜。最後まで手を抜かない構成力に脱帽。
■デザート
赤肉メロンとスモモのシャーベットでさっぱりフィニッシュ。
繊細な盛り付けと滋味深い味つけが印象的な、中華と和の融合コース。
器や盛りつけも美しく、五感で楽しませてくれる構成でした。
ランチでこの内容は満足度が非常に高いです。ディナーにもぜひ伺ってみたいお店。
