ずっと行ってみたかった店、はらまさ。
店の引き戸を潜ると、ふわりとトリュフの香りが漂っている。
この店は日本料理でありながらその枠に捉われる事なく、トリュフなどの食材も取り入れ只管に『美味い』を追求している店である。
まずは鰻と聖護院かぶらの柚子餡掛けから。肉厚な鰻とかぶらに染み込んだ出汁に柚子のアクセントがよく合う。そして次は虎河豚の唐揚げ。見た目はまるでフライドチキン!手で掴んでかぶりつくスタイル。香ばしい衣に山椒塩をつけて食べるとより一層スパイシーになり、河豚の身の旨味を引き立てる。
三品目は蟹とトリュフの茶碗蒸し。これは悶絶級の逸品。トリュフの香り、蟹の旨味、出汁の滋味が三位一体となり織りなす味は至高だ。
お造りは平目と金目鯛に薬味と鮟肝ペーストを乗せ海苔で巻いて食べる。日本酒が止まらなくなる。
噂に聞いていた痛風ソーメンや、サワラの焼き物なども堪らない。
最後の締めはトリュフ御飯。河豚の白子を親子丼風に仕立てて最後にたっぷりのトリュフ。口の中でトロトロに溶けて、トリュフの香りが鼻に抜ける。
2杯目はすき焼きと雲丹、そしてまた溢れんばかりのトリュフ。もう言う事なし!
日本料理の枠を超え、これはもうはらまさと言う料理だ。そんなお店。
