飯田橋にある「ソンブルイユ TOKYO(SOMBREUIL TOKYO)」で、
「選べる前菜・Wメイン・デザートなど季節の充実コース全9品+カフェ付【Menu Diner B】(23,100円)」をいただきました。
“至高の時”という言葉が、そのまま当てはまるディナー。
ここは美食〈ガストロノミー〉の世界を表現する邸宅レストランで、「ミシュランガイド東京」で二つ星を獲得し、7年連続で星を維持している名店です。
この日のコースは、アミューズから小菓子まで、まさに芸術の連続。
タピオカ粉のガレットに本マグロとウニ、根セロリと蓴菜のアミューズから始まり、
サーモンのミ・キュイ、天使の海老、大山鶏、ウフトラウトと、前菜から情報量がすでにすごい。
コンソメロワイヤルにトリュフピュレを重ねたスープは、香りと深みが一気に押し寄せる一皿。
魚料理のキンキ鯛は、ヴァプールでふっくらと仕上げられ、キャビアとフェンネルのソースで上品にまとめられています。ロール状に仕立てられた姿も美しく、見たことのない一皿でした。
そしてスペシャリテのひとつ、鴨とフォワグラのパイ包み焼き。
濃厚でいて重すぎず、ソース・ポワブルヴェールとの相性も抜群で、まさに記憶に残る味わい。
途中にシャンパーニュのグラニテでリセットし、
ハイビスカスや柚子を使ったデセールで軽やかに締めくくられる流れも完璧でした。
空間、サービス、料理のすべてがそろったグランメゾン。
