越して来て35年経つが、海無し県故か所沢には心から美味しいと思えるお寿司屋さんはないと言う評価であった。町寿司としては可もなく不可もない平均的なお店は有るものの、職人の拘り、技量、ネタの鮮度、店構え、商売道具、使われる器、ホスピタリティ等都心の銘店と比べようもないと決め付けていた。だから所沢に店を構えて9年になるこの店も全くノーマークのままであったのである。ふと気まぐれで食べログを眺めて「山浦」さんの口コミを拝見しこれは是非行こうと予約した次第だ。小ぢんまりとしているが、カウンター8席のお店は大将と客との距離感が程よく、終始和やかな雰囲気に溢れている。今回お願いしたのは酒のつまみと握りのコース(20,000円税、サ別)。つまみ4品の後椀ものが供され、そこから握りが10種。締めに桜のジェラート。最初は生ビールで始めようかと思ったが、プレミアムモルツマスターズドリームと聞き麒麟の中瓶からの日本酒。日本酒のドリンクメニューにはなく、大将が提供する流れに相応しいものをペアリングしてくれる。今日は水尾紅と飛露喜純米吟醸。キレのある水尾と円やかな飛露喜は供されるつまみやにぎりにピッタリ。一層美味しく頂けた。握りは全て味付けしてあり、皿に出されたら指で摘んですぐに頂くスタイル。指拭きも添えられているから衛生面も安心。ネタのクオリティや大将の技は写真の通り。普通の煎茶の他にデザートの際にはアールグレイを使った煎茶も選べた。充実の2時間でした。お支払いはトータルで5.5万円程。銀座の1人分の料金で家内と2人分。内容の充実度から考えるとかなりコスパは高いと思う(寿司屋さんでコスパを語るのは不粋だが…)。そして最後に緩やかな風情の女将がこの空間をとても居心地良くしている。溢れ出る人柄が良い。気持ち良い接客ありがとうございます。再訪決定!ご馳走さまです♪
