初訪
久し振りに「神奈川県」「天ぷら」で店舗を検索してまして目が留まったのが、
「天ぷら上村【3.79】」と当店【3.78】。
当店は支払い3万円超えにも拘らず、夜は全く予約が取れない...
平日ランチの席を訪問1ケ月後に確保。
天ぷら好きの食べ友様をお誘いしてお邪魔してみました...
北鎌倉駅から住宅街の小道を抜ける事6-7分。
立派な庭のある邸宅をリノベされた店舗のダイニングは、前オーナーがピアノのミニコンサートも開催されていたようで贅沢な造りで、贅沢な造り。
訪問時は直線カウンター:5席(公称は7席)の設定でユッタリ仕様。

以下、食した所感。
・食材は、意外と県外産をご使用。
・野菜に於いては、②:南瓜の幼果、④:黒神大豆、⑤:四葉(すいよう)胡瓜 等、初めて拝む食材も登場して楽しい。
・コースの流れとして、①②は敢えて【先付】と位置付けましたが、㉒【甘味】以外は全て揚げが絡む稀有な存在。
他店(席数10強)ですと、途中で油替えが必要になるので【口直】が必要になりますが、設定席数の少なさ+①②⑩⑫⑮で、随所に出汁を使った創作揚げにより、客の口をサッパリさせながらフィニッシュさせる構成にも感嘆。
・結果、他店でも拝めるような揚げは、⑥-⑨、⑬⑯、⑱-⑳の9種でしょうか?
・塩のバリエーションも魅力的。③+⑤の「鹿児島坊津の釜炊き塩をベースとして⑫⑭⑯⑰の5種の塩を楽しめるのも楽しい...酒がススミました。⑯では焼き玉蜀黍をイメージされたの事で遊び心を感じます。
先人のレビューを拝読しますと日々、最良のモノをアレンジされているとの印象。
此れまでの定番揚げに捉われない新風の創作揚げのコースが楽しみなところ。
