オーベルジュ。最高の食事と最高の睡眠をセットでとれる場所。そんなオーベルジュの中でも間違いなくトップの一つであろう、ミシェルブラスの訪問記。
ここミシェルブラスは、ナイフで有名なフランスのライヨール村にある。車以外での訪問は厳しいが、飲まずにはいられない。そんなジレンマに満額回答してくれるのが、オーベルジュのいいところ。
細かく書くと長くなるので、出来る限り簡単に。
まずはラウンジで夕日を見ながら泡と卵の皿。凡庸。
特殊ルートからの予約のおかげで、キッチンを見せて頂き、記念撮影の後、着席。名前の書かれたパンを持ってくるサービス。ありきたりなのに、なぜか感動。
白を頼み、まずは詳細を忘れた皿。組み合わせの妙を感じる素晴らしい一皿だったことだけを記憶している。
スペシャリテその1のガルグイユ。美味しいけど、個人的には大阪のハジメさんや、鹿児島のカイノヤさんのものの方が好き。
アンコウを低温調理した皿。火入れが超完璧。アンコウという、決してポテンシャルの高くない魚をここまで美味しく仕上げてきたことに感動。
赤に変えてフォアグラの皿。ここでも組み合わせの妙を感じた。素晴らしい。
アスパラ。時期なんだからホワイトで出してよと思った。でも味はまずまず。
メインの牛肉の皿。感動。唸った。ミシェルブラス行かれる方は、この写真を添付して、この皿出してよって言って予約してほしいほど。また食べてみたい、記憶に残る皿。
スペシャリテその2のアリゴ。チーズとジャガイモとトリュフのコンビネーションが最高。なかなか美味い。
チーズ。もう、壮観。写真ないのが悔やまれる。
スペシャリテその3のクーラン。美味いに決まってるけど、それ以上のものではない。
ラウンジに戻ってプティフールとコーヒー。お土産にクッキー。
4時間のディナーが終わると12時半。
3種類のスペシャリテよりも、メインの魚と肉が印象に残るという珍しいパターンだったが、ホスピタリティが溢れ出る異次元空間で、感動レベルの皿が2つも出てきて大満足。そしてそのまま眠りについた。
Today's article is about my favorite auverge.
'Michel Bras', which is one of the most famous auverges in the world, is located in Laguiole village.(France)
As you know, Laguiole village is famous for its knife and the 'Laguiole knife' is used for the dinner at Michel Bras.
At first, champagne and egg dish was served at the lounge, but it was normal. The sunset from the lounge was great though.
Then I moved to the restaurant and the bread with my name written on it was served. I was so impressed with its hospitality!
Next dish was served with white wine. This dish was good, but I forgot the details.
Gargouillou, specialities 1, was very good. However, we have better Gargouillou-like dishes in Japan so not impressed.
Monkfish roasted with low temperature was one of the highlights of the dinner. This was awesome!! Actually I don't like monkfish so much but this was great.
Foie Grass was served with red wine. This was also good.
Next was green asparagus. This was not so special.
The main course was veal. This was perfect!! I was so impressed with this dish!! I recommend you to ask them to include this dish in the course by attaching this picture with the booking mail.
Aligot, specialities 2, was very good. The combination of truffles and cheese and potatoes was so sweat.
Cheese was also very good.
Coulant, specialities 3, was so yummy. But I was not impressed.
Then I went back to the lounge, where coffee and Petit fours were served with homemade cookies as a souvenir.
'Michel Bras' was full of hospitality and is one of the most favorite auverges in the world for me!!
